Honyama Ceremonial Matcha is a rare, high-elevation green tea from one of Japan's oldest and most respected tea regions in Shizuoka. Historically reserved for monks and the shogunate, this matcha is prized for its exceptional clarity and "mountain aroma" (yama no kaori).

Honyama matcha is known for a refined and elegant character that differs from the heavy creaminess of other regions.

  • Taste: It offers a transparent, clean flavour with gentle umami, soft vegetal notes, and a natural sweetness that lacks harsh bitterness.
  • Aroma: Characterised by a distinctive "mountain air" fragrance, it is often described as fresh, mineral, and sophisticated.
  • Finish: The aftertaste is long and elegant, sometimes revealing subtle notes of nori (seaweed) or a "sakura-like" sweetness.
The unique environment of the Honyama mountains, where the Abe and Warashina rivers meet, is critical to its quality.
  • Natural Shading: Dense morning and evening mists act as a natural curtain, protecting the leaves from direct sunlight. This slows growth and boosts L-theanine and amino acid content, resulting in a smoother, sweeter cup.
  • High Altitude: Grown on steep slopes, the tea plants absorb rich minerals from the mountain soil, contributing to the tea's complex depth.
Instructions: Rinse the teacup with boiling water before preparing the tea. Sieve the matcha and put 1-2 teaspoons into a cup and gently pour 80ml of 80 ̊C water on it. Mix with whisk till a fine foam appears. Enjoy!!
