Dark Chocolate 70% filled with port wine and figs ganache

A timeless classic with a sugar substitute: figs in port are a classic dessert or cocktail and now they come as a dessert chocolate by Zotter as well. We use a Portuguese Reserve Ruby Port by Romariz with an extremely fruity flavour, matured in oak barrels, let it flow into a very creamy, dark port ganache and add some bits of fig marinated in port, which pop up as a fruity and excitingly crunchy surprise. It’s covered in dark chocolate with a 70% cacao content, which is sweetened with maple sugar, an exciting sugar alternative.
